The Origin
Enjoying a good cocktail or drinking a bubble that does not necessarily contain alcohol is an interesting phenomenon that has achieved growing success in recent years. Mazzalùa was created to satisfy palates eager to savor a fresh, pleasant, refined and sparkling product, without worrying about its alcohol content.
It is dedicated to all those who do not consume alcohol for medical, dietary, religious or cultural reasons, or for people who are particularly concerned about their well-being. The secret recipe balances the precious white grape must, the natural vinegar, while the inclusion of the bold contemporary "sparkling" makes everything cheerful and bubbly.

Natural vinegar
Along with the precious grape must, natural vinegar is an indispensable element in Mazzalùa’s secret recipe. But what is 'Natural Vinegar'? When exposed to certain conditions of temperature and oxygenation, wine can be attacked by bacteria that turn the alcohol into vinegar. For this process to take place spontaneously, without the addition of selected bacteria commonly available on the market, and without the insertion of other already developed vinegars, very, very long periods are required. Not months, but years, or even decades. These fine vinegars, before being attacked by acetic acid, are created to become great wines, so using accelerators to speed up production would mean interrupting their wonderful natural evolution. The summer heat, winter cold and oxygen, vital elements that allow this miraculous product to reach maturity, are combined with the most precious resource of all: Time.



The concept
Mazzalùa is 'Alcohol Free Sparkling' as the correct global designation reads, while 'Bevanda Analcolica Frizzante' is the authentic Italian translation. Tasting the ancient, aromatic vinegars in the charming, dedicated cellars, perceiving their extraordinary nature, recording their uniqueness and unspeakable excellence, convinced the four founding partners that such a natural treasure should not remain known to a few but, on the contrary, should become a universal heritage, inducing them to pursue the creation of a universal beverage that transcends tradition, culture, faith, age, and is therefore inevitably alcohol-free. In terms of taste olfactory Mazzalùa expresses itself with a gently acidic gustative note, a touch of fruitiness caressed by a naturally soft complement, perceptible in the sweetness of the grape must.
The four founders have dedicated perseverance, resources and research to eliminate the characteristic instability of the vinegar and to make the best use of the must in the Mazzalùa blend. Complementing the drink is a bright touch of carbon dioxide (CO2), useful both as a natural preservative and as an element of joy, thanks to the vibrant, mischievous sparkle that emerges, brightening spirits and sometimes bearing witness to life's important moments. The company
The ancient Romans sipped a vinegar-based drink from large amphoras, which was perfected by blends of herbs and spices. This particular drink was called Poska, of which each patrician family kept its own recipe. The name The name Mazzalùa is the ancient term referring to that beautiful piece of land between the Italian and Slovenian hills, which already in ancient times gave rise to great wines, noble predecessors of natural vinegars. The name, Mazzalùa, expresses gratitude to our terroir.

A refined combination between the sober scent of Earl Gray bergamot black tea and the freshness of Mazzalùa, a sparkling alcohol-free drink, designed for greedy palates curious about a new taste experience, with moderate acidity and very pleasant taste.
Ingredients:
- 10 ml Earl Gray bergamot black tea syrup
- 50 ml of Earl Gray iced tea
- 100 ml of Mazzalùa
BASIL HONEY
Virgin basil smash twist.
Ingredients:
- 2 tsp of honey
- 5 basil leafs
